Brunch à la Six of Crows

HUTSPOT recipe

6 large potatoes (peeled and diced); 6 carrots (peeled and diced; 1 onion (peeled and diced); 3 smoked sausages of your choice

Place potatoes, carrots, and onion in a large pot (in that order, in 3 layers). Add water (water should reach the carrots but not completely immerse the onions). Cook on stove on medium/high heat until potatoes and carrots are tender (you should be able to pierce them easily with a fork)—about 15-20 minutes. 

Meanwhile panfry the sausages until fully cooked. Set aside.

Drain potatoes/carrots/onion pot, and then mash the ingredients together.

Dice sausages and add to the potatoes/carrots/onion purée. Salt and pepper to taste.  



Leftover (super fast) version: potato purée + carrots  (shredded)+ leftover meat (shredded). Salt and pepper to taste.
